I’ve fallen in love with eggplant. It always seemed so blah and boring – at least what was on the inside. The outside has always fascinated me. So pretty-purple! God makes such interesting fruits and veggies, doesn’t He?! And these guys are perfect for making eggplant pizza bites!
But, I found some great new ideas on Pinterest to use all this eggplant I’ve been getting from my local organic food delivery! And this one was a winner with the kiddos and hubby!
Think of it kind of like Bagel Bites…but without the nasty bagel. Or the nasty pepperoni. Ok, so they’re really only similar in that they’re about the size of Bagel Bites. Fun for the kiddos!!
Eggplant Pizza Bites – Oh, Baby!
You’ll need eggplant (clearly), pizza sauce (you can use my fave spaghetti sauce recipe – make a batch, freeze some and use some!), cheese and toppings. Oh, and when you see “salt” below, please know this doesn’t mean the salt we all grew up on {myth buster!}. Oh no. Please pick you up some of this good stuff. It’s so worth it: Redmond Trading – RealSalt.
I used about 5 small eggplant as a main dish and had enough for a meal and leftovers for our family of 5. And I used raw cheddar on some and fresh mozzarella on others. I think my faves were the bites with just the cheddar – it has an extra “kick.”
And, since I used my spaghetti sauce with ground beef, I skipped adding anything other than cheese for toppings. Easy-peasy.
These Eggplant Pizza Bites might just be a Friday night thing. Oh…and these are doable with three toddlers running around in the kitchen and pulling everything out of cabinets. Ask me. Ha!
- 5 small eggplant
- 24 oz pizza sauce
- 1 lb cheese (cheddar, mozzarella, etc.)
- toppings
- salt
- pepper
- 2 T olive oil (or coconut oil, etc.), halved
- Wash the eggplant and slice.
- Toss with half the oil and sprinkle with salt.
- Set aside for about 30 minutes.
- Lay slices on a cooking rack placed over a cookie sheet.
- Brush with remaining oil and sprinkle with salt and pepper.
- Bake at 425 for 5-8 minutes - until the slices get a little toasty.
- Remove from oven and top with pizza sauce, toppings and cheese.
- Bake again until the cheese is all melty...just a few minutes, so stay close by!

I’ve never eaten eggplant. What does it taste like?
Hmmmm…that’s a good question! Haha! It “looks” similar to cukes on the inside. But that’s not a good flavor comparison. I do find eggplant rather bland unless doctored up. Which is fun to do. 😀 Thanks for linking up!!
